This type of coffee bean uses a special fermentation method. The brandy barrel fermentation process involves placing washed green beans into oak barrels for low-temperature fermentation. resulting in a flavor profile that embodies the purity. aroma. and sweetness of brandy.
Brandy. also known as the "soul of wine." differs from regular wine in that after the grapes are fermented. the liquid is distilled to extract a high-concentration alcohol essence before aging in barrels. During the aging process. this essence breaks down and absorbs the lignin compounds from the oak barrel's interior. ultimately becoming a brandy with an amber color and the fragrance of lychee and honey.
